The wines we produce go through a complex, strict process starting in the vineyard.
We harvest the grapes and bring them to the winery for a slow cold fermentation process, where the flavors, aromas and colors are produced. After that we age the wine in French oak barrels. This process is supervised by the winery’s vintner, Adam Alfasi.
The wine comprises 4 different ranges: the Odem Forest range, the Volcani range, the Har Odem range and the Premium Alfasi range. In addition, we produce fortified dessert wines, Inbar and Shani, as well as a cherry liqueur made only from local cherries. Our wines offer an abundance of flavors, colors and aromas, and all of them are kosher since the 2007 harvest.
